Instructions
  1. Fry the onions and peppers in a little olive oil until softened.
  2. Add all of the rice and continue to fry until it is beginning to turn translucent.
  3. Add a ladleful of hot vegetable stock and cook over a medium heat. Keep stirring until all the stock is absorbed.
  4. Repeat this until all the stock has been used and the risotto becomes thick and glossy.
  5. Add in the halloumi and balsamic vinegar and continue to stir until everything is incorporated and then remove from the heat.
  6. Leave the risotto to sit for a few minutes so that all the flavours and liquid absorb and settle.
  7. Just before serving, fold in the chopped mint.
  8. Serve with a Wild Food Company Pinot Grigio Blush. Enjoy!
